The collaboration aims to create sustainable seafood alternatives by leveraging Umami’s technology, K-Cell’s expertise in cell culture media, and WSG’s bioprocessing equipment. The partnership also seeks to gain regulatory approval from South Korea’s Ministry of Food and Drug Safety, with plans to co-invest in a production facility, initially focusing on cultivated eel.
